Instructions
  1. Soak the lentils in water for 2-3 hours or over night.
  2. Prepare the fresh tomato juice, you can find the method in notes after this recipe.
  3. Sautee in some olive oil the onion in a warm heat, until they break against the spoon. Add the garlic (for a light version take the inside heart out).
  4. Add the lentils, salt, pepper, rosemary, bay leaves and tomato juice. Top with about 1 1/5 liter water. Cook for about 1 hour on a low heat and complete with warm water if needed.
  5. When the lentils are cooked, add the left olive oil, the vinegar and boil for another 15 minutes.
  6. You can keep as much liquid as much you would like to serve this dish with warm home bread. We serve it with feta cheese and extra vinegar if the case.
