Instructions
  1. Wash the intestines very well. Wash the organs / entrails very well. Cut them into proper sized piceces / for rotisserie.
  2. In a bowl, mix well all the entrails with salt, pepper, oregano and optional grated cheese. Parmezan should also work. Pour over some oil as well and mix again.
  3. On a skewer, place all the organs pieces. Then wrap the intestines all around the skewer and cook until ready, brushing with a mixture of olive oil and lemon zest - once in a while.
  4. Remove the kokoretsi when cooked and serve hot!
