Instructions
  1. Clean the squid, take out the long transparent bone and pus to bring out the teeth from the tentacles and cut them out. Slice the squid in finger size rings and the tentacles in 2-3 pieces.
  2. Heat the oil (you will need a big quantity enough to cover the calamari rings when cooking).
  3. Put the calamari rings in flower and coat everywhere.
  4. Add the calamari rings into the oil and cook for about 4-6 minutes without disturbing them in order to keep the flour coat and make the beautiful crunchy crust.
  5. As they begin to slowly turn golden brown and separate or even rise on top of the oil take them out on a kitchen paper towel to dry the excess oil away.
  6. Serve hot with lemon juice on top and salt.
Recipe Notes

A good sign of fresh calamari is a completely white colour. Do not cook pink spotted kalamari, they are expanded.
